Chop the dark chocolate into small pieces and place it in a heatproof bowl. Set the bowl over a pot of simmering water (double boiler) and stir occasionally until the chocolate is completely melted. Remove from heat and let it cool slightly.

Carefully separate the egg yolks from the egg whites. Place the egg whites in a clean, dry bowl and the yolks in a separate large mixing bowl.
