    Cook the Bucatini

    Bring a large pot of salted water to a boil. Add bucatini pasta and cook according to package instructions until al dente, usually around 9-11 minutes.

    Prepare the Cheese and Pepper

    While the pasta is cooking, in a large mixing bowl, combine the grated Pecorino Romano cheese and freshly cracked black pepper. Mix well until combined.

    Reserve Pasta Water

    Before draining the pasta, reserve about 200 ml of the pasta cooking water. Set aside.

    Combine Pasta and Cheese Mixture

    Once the pasta is cooked, drain it and immediately add it to the bowl with the cheese and pepper mixture. Use tongs to toss the pasta, coating it evenly with the cheese.

    Adjust Consistency

    If the pasta seems dry, slowly add reserved pasta water, a little at a time, until a creamy sauce forms that coats the bucatini.

    Serve

    Plate the bucatini cacio e pepe and garnish with additional Pecorino Romano and more freshly cracked black pepper, if desired. Serve immediately.
