Method

For the Grilled Salmon

  1. 1

    Prepare the Marinade

In a small bowl, combine olive oil, lemon juice, minced garlic, dried dill, salt, and black pepper. Mix well.

  2. 2

    Marinate the Salmon

Place the salmon fillets in a shallow dish and pour the marinade over them, ensuring each fillet is well coated. Cover and refrigerate for at least 30 minutes.

  3. 3

    Preheat the Grill

Preheat your grill to medium-high heat (about 375°F to 400°F).

  4. 4

    Grill the Salmon

Remove the salmon from the marinade and discard the excess. Place the fillets skin-side down on the grill. Grill for about 6-8 minutes per side, or until the salmon flakes easily with a fork.

For the Seasonal Vegetables

  1. 5

    Prepare the Vegetables

Wash and slice the zucchini and bell pepper into bite-sized pieces. Trim the asparagus ends.

  2. 6

    Toss with Olive Oil

In a large bowl, combine the prepared zucchini, bell pepper, and asparagus. Drizzle with olive oil, and season with salt and black pepper. Toss to coat.

  3. 7

    Grill the Vegetables

Using a grill basket or skewers, grill the vegetables over medium heat for about 5-7 minutes, or until they are tender and slightly charred.
