Method
Preparation
- 1
Prepare the Corn
If using fresh corn, remove the kernels from the cob. If using canned corn, drain and rinse the corn to remove excess sodium.
- 2
Mix Dry Ingredients
In a large bowl, whisk together the all-purpose flour, baking powder, salt, and black pepper until well combined.
- 3
Mix Wet Ingredients
In another bowl, combine the corn kernels, egg, milk, and chopped green onions. Mix until well incorporated.
Combining and Cooking
- 4
Combine Mixtures
Gradually add the wet mixture to the dry mixture, stirring gently until just combined. Be careful not to overmix; the batter should be lumpy.
- 5
Heat Oil
In a large skillet, heat the vegetable oil over medium heat until hot but not smoking. You can test the oil by dropping a small amount of batter into it; if it sizzles, it’s ready.
- 6
Fry Fritters
Using a tablespoon, drop spoonfuls of the batter into the hot oil, leaving space between each fritter. Fry for about 3-4 minutes on each side, or until golden brown and crispy.
- 7
Drain and Serve
Once cooked, remove the fritters from the oil and place them on a paper towel-lined plate to drain excess oil. Serve warm with your favorite dipping sauce.
