Prepare the Cabbage
Remove the outer leaves of the green cabbage and red cabbage. Cut them into quarters and remove the core. Shred the cabbage using a sharp knife or a food processor until you have about 4 cups of shredded green cabbage and 2 cups of shredded red cabbage.

Peel the carrots and grate them using a box grater or a food processor until you have about 2 cups of grated carrots.

Trim the ends of the green onions and chop them finely. You should have about 1 cup of chopped green onions.
Make Dressing

In a large mixing bowl, combine 1 cup of mayonnaise, 2 tablespoons of apple cider vinegar, 1 tablespoon of sugar, 1 teaspoon of salt, and 1 teaspoon of black pepper. Whisk together until smooth and well combined.
Combine and Serve

Combine Vegetables and Dressing
Add the shredded green cabbage, shredded red cabbage, grated carrots, and chopped green onions to the bowl with the dressing. Toss everything together until the vegetables are evenly coated with the dressing.
