Gather Your Ingredients
Make sure you have all the ingredients and equipment ready before starting.
Making the Cheese

Add the Acid
Once the milk reaches the desired temperature, remove it from the heat and stir in the white vinegar or lemon juice. Let it sit for about 5-10 minutes until curds begin to form.

Strain the Curds
Line a colander with cheesecloth and place it over a mixing bowl. Carefully pour the curds and whey into the colander to separate them. Let it drain for about 15-20 minutes.

Rinse and Season
Once drained, rinse the curds under cold water to remove any remaining whey. Then, transfer the curds to a bowl, add salt, and mix well. If using herbs, fold them in at this point.

Shape the Cheese
Press the curds into a mold or shape them by hand into a ball or log. Wrap in cheesecloth if desired.

Refrigerate
Place the cheese in the refrigerator for at least an hour before serving to allow it to firm up.
