Prepare the Ingredients
Chop the green onions, dice the tomatoes, and slice the mushrooms. Set aside.

Cook the Vegetables
In a skillet, melt 1 tablespoon of butter over medium heat. Add the sliced mushrooms and cook until tender, about 3-4 minutes. Add the diced tomatoes and chopped green onions, and cook for an additional 2 minutes. Remove the vegetable mixture from the skillet and set aside.

Whip the Eggs
In a mixing bowl, crack the eggs and whisk them together with salt and black pepper until well combined.

Cook the Omelette
In the same skillet, add the remaining tablespoon of butter over medium heat. Pour in the whipped eggs and let them cook for about 1-2 minutes until the edges begin to set.

Add Fillings
Once the eggs are slightly set, add the cooked vegetable mixture, diced ham, and shredded cheese on one half of the omelette. Allow it to cook for another 1-2 minutes until the cheese melts.

Fold and Serve
Carefully fold the omelette in half over the filling and cook for another minute. Slide the omelette onto a plate and serve hot with your choice of hash browns or country potatoes and toast.
