Prepare the Grits
In a medium saucepan, bring the chicken broth to a boil. Stir in the stone ground yellow grits, reduce the heat to low, and simmer for about 20-25 minutes, stirring occasionally until thickened. Stir in butter, and season with salt and black pepper.

Cook the Bacon
In a large skillet, cook the chopped applewood smoked bacon over medium heat until crispy. Remove the bacon and set aside, leaving the drippings in the skillet.

Make the Bourbon Tomato Gravy
In the same skillet with bacon drippings, add the diced onion and minced garlic. Sauté until the onion is translucent. Add the diced tomatoes and cook for another 3-4 minutes. Pour in the bourbon and cook until the mixture reduces slightly, about 2-3 minutes. Season with salt and pepper.

Cook the Shrimp
Add the shrimp to the skillet with the gravy and cook until the shrimp are pink and opaque, about 3-5 minutes. Stir in the cooked bacon.

Serve
To serve, spoon the grits onto a plate, ladle the shrimp and bourbon tomato gravy over the grits, and garnish with sliced green onions.
