    Prepare the Potatoes

    Peel the Russet potatoes and cut them into thick fries. Rinse them in cold water to remove excess starch, then pat them dry with a towel.

    Make the Batter

    In a large bowl, mix together the all-purpose flour, cornstarch, baking powder, salt, black pepper, oregano, thyme, and paprika until well combined.

    Coat the Fries

    Dredge the dry fries in the batter mixture, ensuring they are evenly coated.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Fries

    Carefully add the battered fries to the hot oil in batches, ensuring not to overcrowd the pot. Fry for about 4-5 minutes or until golden brown and crispy.

    Drain and Season

    Remove the fries from the oil and drain on paper towels. Immediately sprinkle with sea salt while they are still hot.
