    Prepare the Ingredients

    Peel and dice the potatoes into small cubes. Chop the red bell pepper into small pieces and set aside.

    Cook the Potatoes

    In a large skillet, heat the olive oil over medium heat. Add the diced potatoes and season with salt and pepper. Cook for about 10 minutes, stirring occasionally, until the potatoes are golden and tender.

    Add the Chorizo and Bell Peppers

    Add the local chorizo to the skillet and cook until browned, about 5 minutes. Then add the chopped red bell pepper and cook for an additional 3 minutes, until the pepper is soft.

    Prepare the Egg Mixture

    In a bowl, whisk together the eggs and cheddar cheese. Season with a little salt and pepper.

    Combine and Cook the Frittata

    Pour the egg mixture over the chorizo and vegetable mixture in the skillet. Cook on low heat for about 8-10 minutes, until the edges are set but the center is still slightly jiggly.

    Finish Under the Broiler

    Preheat your broiler. Transfer the skillet to the broiler for 2-3 minutes to set the top. Keep an eye on it to prevent burning.
