Prepare the Ingredients
In a large mixing bowl, season the cubed pork shoulder with salt and black pepper. Set aside.

Add Vegetables
Add the diced sweet potatoes, chopped chili peppers, and corn kernels to the pot. Stir to combine.

Add Broth and Simmer
Pour in the chicken broth, bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 1 hour, or until the pork is tender.

Finish with Pepitas and Cilantro
Once the pork is tender, stir in the pepitas and chopped cilantro. Adjust seasoning with additional salt and pepper if needed. Cook for another 5-10 minutes.

Ladle the pork stew into bowls and top each serving with a dollop of sour cream. Garnish with additional cilantro if desired.
