    Prepare the Ingredients

    Wash and peel the potatoes. Cut them into small cubes (about 1/2 inch). Dice the bell peppers and onion.

    Parboil the Potatoes

    In a large pot, bring water to a boil. Add the cubed potatoes and cook for about 5-7 minutes, until slightly tender. Drain and set aside.

    Caramelize the Onions

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and cook, stirring occasionally, until caramelized (about 8-10 minutes). Remove from the skillet and set aside.

    Sauté the Peppers

    In the same skillet, add another tablespoon of olive oil and sauté the diced bell peppers for about 5 minutes until tender. Remove and set aside with the onions.

    Fry the Potatoes

    Add the remaining tablespoon of olive oil to the skillet. Add the parboiled potatoes, salt, pepper, paprika, and garlic powder. Cook over medium-high heat, stirring occasionally, until the potatoes are golden brown and crispy (about 10-15 minutes).

    Combine and Serve

    Add the caramelized onions and sautéed peppers back to the skillet with the potatoes. Stir well to combine and cook for an additional 2-3 minutes. Serve hot.
