Prep the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips, about 1/4 inch thick.

Prepare the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, salt, dried herbs, and black pepper. Mix well.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Batter the Potatoes
Toss the dried potato strips in the batter mixture until evenly coated.

Fry the Potatoes
Carefully lower the battered potato strips into the hot oil in batches, frying for about 4-5 minutes or until golden brown and crispy.

Drain and Season
Remove the fries from the oil and let them drain on paper towels. Immediately sprinkle with additional sea salt and herbs to taste.

Serve
Serve the fries hot with house-smoked ketchup on the side.
