Prepare the Biscuits
Preheat your oven to 425°F (220°C). In a large mixing bowl, combine the flour, baking powder, baking soda, and salt. Whisk together to combine.

Add Butter and Pork Cracklin’
Cut the butter into small cubes and add it to the flour mixture. Use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs. Stir in the pork cracklin’.

Incorporate Buttermilk
Make a well in the center of the mixture and pour in the buttermilk. Stir gently until the dough just comes together. Do not overmix.

Shape the Biscuits
Turn the dough out onto a floured surface and gently pat it into a 1-inch thick rectangle. Use a biscuit cutter to cut out biscuits and place them on a baking sheet lined with parchment paper.

Bake in the preheated oven for 12-15 minutes or until golden brown. Remove from oven and let cool slightly.
