    Make the Caramelized Onion Aioli

    In a mixing bowl, combine mayonnaise, caramelized onions, minced garlic, lemon juice, salt, and black pepper. Mix until well blended and set aside.

    Prepare the Burger Patties

    Form the ground beef into 4 equal-sized patties, season with salt and pepper.

    Cook the Burgers

    Heat a grill or skillet over medium-high heat. Cook the patties for 4-5 minutes per side or until they reach your desired doneness. Add a slice of Ashe County cheddar cheese on top of each patty during the last minute of cooking to melt.

    Toast the Buns

    While the burgers are cooking, lightly toast the brioche buns on the grill or in a toaster until golden brown.

    Assemble the Burger

    Spread a generous amount of the caramelized onion aioli on the bottom half of each toasted bun. Place the cooked burger patty on top, followed by slices of heirloom tomato and house dill pickles. Top with the other half of the bun.
