    Prepare the Potatoes

    Preheat your oven to 400°F (200°C). Wash and scrub the russet potatoes thoroughly. Prick each potato a few times with a fork and place them directly on the oven rack. Bake for 45-60 minutes or until tender when pierced with a fork.

    Prep the Pizza Base

    Once the potatoes are done, remove them from the oven and let them cool for a few minutes. Cut each potato in half lengthwise and scoop out some of the flesh, leaving a thin layer of potato inside the skin to create a 'pizza crust'.

    Season and Assemble

    In a bowl, mix the scooped potato flesh with olive oil, salt, black pepper, and garlic powder. Spread this mixture back into the potato skins. Add a layer of pizza sauce on top of the potato mixture, followed by a generous amount of shredded mozzarella cheese and your favorite toppings.

    Return the assembled potato pizzas to the oven. Bake for an additional 15-20 minutes or until the cheese is melted and bubbly.
