Prepare the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker or pot. Cook according to the rice cooker's instructions or bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes. Once cooked, remove from heat and let it sit covered for 10 minutes.
Season the Rice
In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice has cooled slightly, gently fold the vinegar mixture into the rice. Set aside.
Prepare the Salmon
Preheat a grill or grill pan over medium-high heat. Season the salmon fillet with salt and pepper. Grill the salmon for about 4-5 minutes on each side, or until cooked to your liking. Remove from grill and let it rest for a few minutes before slicing.
Assemble the Sushi
Lay a nori sheet on a bamboo sushi mat or a clean surface. With wet hands, take a handful of sushi rice and spread it evenly over the nori, leaving about an inch at the top. Place slices of grilled salmon and a small amount of wasabi in the center of the rice. Roll the sushi tightly from the bottom up, using the mat to help shape it. Repeat with remaining ingredients.
Slice and Serve
Using a sharp knife, slice the sushi rolls into bite-sized pieces. Sprinkle with sesame seeds if desired. Serve with soy sauce on the side for dipping.
