Prepare the Pork
Season the pork tenderloin with salt and black pepper. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add the pork and sear on all sides until browned, about 4-5 minutes.

Cook the Pork
Reduce the heat to medium-low, cover the skillet, and cook for an additional 15-20 minutes, or until the internal temperature reaches 145°F (63°C). Remove from heat and let it rest for 5 minutes.

Prepare the Salsa Verde
In a bowl, combine chopped parsley, capers, minced garlic, lemon juice, and the remaining tablespoon of olive oil. Mix well.

Prepare the Veggies
While the pork is resting, chop the cherry tomatoes, red onion, and bell pepper. Toss them in a bowl with a pinch of salt.

Serve
Slice the pork tenderloin and serve it topped with the Italian salsa verde and the chopped vegetables.
