    Make the Dough

    In a bowl, mix the all-purpose flour and salt. Gradually add boiling water while stirring until a dough forms. Knead on a floured surface for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.

Filling Preparation

    Prepare the Filling

    In a large bowl, combine shredded cabbage, grated carrot, chopped green onions, soy sauce, minced ginger, and sesame oil. Mix well and set aside.

Assembly and Cooking

    Assemble the Potstickers

    Roll the dough into small balls and flatten each ball into a thin circle. Place a spoonful of filling in the center, fold the dough over and pinch the edges to seal. Repeat with remaining dough and filling.

    Cook the Potstickers

    Heat a non-stick skillet over medium heat. Add a little oil and arrange potstickers in a single layer. Cook for about 2-3 minutes until the bottom is golden brown. Add a splash of water to the skillet and cover immediately to steam for about 5 minutes.

    In a small bowl, whisk together soy sauce, rice vinegar, grated ginger, and sesame seeds. Set aside for serving.
