    Cook the Bacon

    In a large pot over medium heat, cook the bacon slices until crispy. Remove bacon from the pot and let drain on paper towels. Reserve about 2 tablespoons of the bacon fat in the pot.

    Sauté Vegetables

    Add the chopped onion and diced celery to the pot with the reserved bacon fat. Sauté until the vegetables are soft, about 5 minutes.

    Add Potatoes and Broth

    Stir in the diced potatoes, chicken broth, dried thyme, salt, and black pepper. Bring the mixture to a boil, then reduce heat and let simmer until the potatoes are tender, about 15 minutes.

    Add Clams and Cream

    Once the potatoes are cooked, add the drained clams and heavy cream to the pot. Cook over low heat for an additional 5 minutes, stirring occasionally.

    Serve

    Ladle the clam chowder into bowls, crumble the cooked bacon on top, and garnish with chopped chives before serving.
