Prepare the Ingredients
Clean the wild mushrooms thoroughly to remove any dirt. Slice them into bite-sized pieces if they are large. Mince the garlic and finely chop the shallots. Chop the fresh parsley and set aside.
Cook the Tagliatelle
Bring a large pot of salted water to a boil. Add the fresh tagliatelle and cook according to package instructions, usually about 2-4 minutes until al dente. Reserve 1 cup of pasta water and then drain the tagliatelle.
Sauté the Aromatics
In a large skillet, heat the olive oil and butter over medium heat. Add the minced garlic and chopped shallots. Sauté for about 2-3 minutes until the shallots are translucent and the garlic is fragrant.
Combine with Tagliatelle
Add the drained tagliatelle to the skillet with the mushrooms. Toss gently to combine, adding reserved pasta water a little at a time until the desired sauce consistency is reached.
Finish the Dish
Sprinkle the chopped parsley and grated Parmesan cheese over the tagliatelle. Toss again to mix everything evenly, adjusting the seasoning with more salt and pepper if needed.
Serve
Plate the tagliatelle with wild mushrooms, garnishing with additional Parmesan and parsley if desired. Serve immediately and enjoy!
