Preparation of Cheese

    Pour the whole milk into a large pot and heat it over medium heat until it reaches 190°F (88°C), stirring gently to prevent scorching.

    Once the milk reaches 190°F, remove it from the heat and slowly add the white vinegar while stirring gently. Let it sit for about 5 minutes to allow curds to form.

    Add Rennet

    Dissolve the rennet tablet in a small amount of cool, chlorine-free water. After the curds have formed, add the rennet mixture to the pot and stir gently for 30 seconds. Allow it to sit undisturbed for about 5-10 minutes until the curds have set.

    Cut and Cook the Curds

    Using a long knife, cut the curds into 1-inch cubes. Return the pot to low heat and gently stir the curds for 5-10 minutes until they are firm and begin to separate from the whey.

    Strain the Curds

    Line a colander with cheesecloth and pour the curds into the colander to drain the whey. Gather the cheesecloth and form a pouch, squeezing out as much whey as possible.

    Transfer the drained curds into a mixing bowl. Add salt, dried basil, dried oregano, and garlic powder. Mix well to combine.

    Transfer the mixture onto a clean surface and knead it with your hands until it becomes smooth and elastic, about 5 minutes.
