In a small bowl, combine the warm milk (110°F or 43°C) and the active dry yeast. Let it sit for about 5 minutes until it becomes frothy.

In another bowl, beat the egg and then add the melted unsalted butter and the yeast mixture. Stir to combine.

Pour the wet mixture into the dry ingredients and mix until a dough forms. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.

Place the dough in a greased bowl, cover it with a clean cloth, and let it rise in a warm place for about 1 hour or until it has doubled in size.

In a heavy-bottomed pot, heat the vegetable oil over medium heat until it reaches 350°F (175°C). Use a thermometer for accuracy.

Shape the Beignets
Once the dough has risen, punch it down and roll it out on a floured surface to about 1/2 inch thickness. Cut the dough into squares or rectangles.

Fry the Beignets
Carefully drop the beignet pieces into the hot oil, a few at a time, and fry for about 2-3 minutes on each side or until golden brown.

Drain and Dust
Use a slotted spoon to remove the beignets from the oil and place them on a plate lined with paper towels to drain excess oil. While still warm, dust generously with powdered sugar.
