If using frozen shrimp or catfish, thaw them in the refrigerator overnight. For seasoned fried shrimp or catfish, simply follow the package instructions to fry them until golden brown.

In a bowl, mix mayonnaise, sriracha, lemon juice, and garlic powder to create the Boom Boom sauce. Toss cooked shrimp in the sauce to coat evenly.
Assembling the Poboy

Slice the po'boy bread lengthwise without cutting all the way through. Lightly toast the inside for added texture.

Start by spreading mayonnaise inside the sliced bread. Add lettuce, followed by tomato slices, pickles, and your choice of seafood (Boom Boom shrimp, fried shrimp, or fried catfish).
