Prepare the Marinade
In a small bowl, combine olive oil, minced garlic cloves, fresh rosemary, salt, black pepper, and lemon juice. Mix well to create a marinade.

Marinate the Pork
Place the pork loin on a cutting board and rub the marinade all over the meat. Ensure it is well-coated. Cover with plastic wrap and let it marinate in the refrigerator for at least 1 hour, or overnight for best results.

Preheat the Oven
Preheat your oven to 200°C (400°F).

Sear the Pork
In a large oven-safe skillet, heat a bit of olive oil over medium-high heat. Once hot, add the marinated pork loin and sear it on all sides until golden brown, about 3-4 minutes per side.

Roast the Pork
Transfer the skillet to the preheated oven. Roast the pork for about 25-30 minutes, or until the internal temperature reaches 63°C (145°F).

Rest the Pork
Remove the pork from the oven and let it rest for at least 10 minutes before slicing. This allows the juices to redistribute.
Serving

Slice and Serve
Slice the pork loin into thick pieces and serve on a cutting board. Optionally, garnish with additional fresh rosemary and lemon slices for a fresh touch.
