Alfredo Sauce

Method

Cooking Pasta

    Boil Water

    In a large pot, bring 2 liters of water to a rolling boil. Add 1 tablespoon of salt to the water.

    Cook Pasta

    Once the water is boiling, add 300 grams of pasta. Stir occasionally and cook according to package instructions until al dente. This usually takes about 8-10 minutes.

    Drain Pasta

    Once the pasta is cooked, drain it in a colander and set aside. Reserve a small cup of pasta water if needed for the sauce.

Making Marinara Sauce

    Sauté Onions and Garlic

    In a saucepan, heat 2 tablespoons of olive oil over medium heat. Add 1 diced medium onion and sauté until translucent, about 5 minutes. Add 3 minced garlic cloves and cook for another minute.

    Add Tomatoes and Seasoning

    Stir in 800 grams of crushed canned tomatoes, 1 teaspoon of dried oregano, 1 teaspoon of salt, and 1 teaspoon of pepper. Bring to a simmer.

    Finish Sauce

    Let the sauce simmer for about 15-20 minutes, stirring occasionally. Add 10 chopped fresh basil leaves before serving.

Making Alfredo Sauce

    Melt Butter

    In a saucepan over medium heat, melt 50 grams of butter.

    Add Cream and Garlic

    Once the butter is melted, add 200 ml of heavy cream and 2 minced garlic cloves. Stir well to combine and heat through.

    Add Cheese and Seasoning

    Gradually stir in 100 grams of grated Parmesan cheese until melted and the sauce is smooth. Season with 0.5 teaspoon of salt and 0.5 teaspoon of pepper.

Serving

    Combine Pasta and Sauce

    Choose either the marinara or alfredo sauce and combine it with the drained pasta. If the sauce is too thick, add a bit of the reserved pasta water to loosen it.

    Plate and Serve

    Serve the pasta on plates, garnished with additional freshly chopped basil for marinara or sprinkle with more Parmesan for alfredo. Enjoy your meal!
