Method

Salmon Preparation

  1. 1

    Prepare the Marinade

In a small bowl, mix hot honey, olive oil, salt, and black pepper. This will be the marinade for the salmon.

  2. 2

    Marinate the Salmon

Place the salmon fillets in a shallow dish and pour the marinade over them. Let them marinate for at least 30 minutes.

Mango Salsa Preparation

  1. 3

    Dice the Ingredients

Peel and dice the ripe mango, finely chop the red onion, and dice the red bell pepper.

  2. 4

    Combine the Salsa

In a medium bowl, combine the diced mango, red onion, red bell pepper, chopped cilantro, and lime juice. Stir gently to mix. Set aside to let flavors meld.

Broccoli Preparation

  1. 5

    Prepare the Broccoli

In a large pot of boiling salted water, add the broccoli florets and cook for about 3-4 minutes until bright green and tender-crisp.

  2. 6

    Season the Broccoli

Drain the broccoli and toss it with olive oil, salt, and garlic powder. Set aside.

Grilling the Salmon

  1. 7

    Preheat the Grill

Preheat your grill to medium-high heat.

  2. 8

    Grill the Salmon

Place the marinated salmon fillets on the grill. Grill for about 4-5 minutes on each side, or until the salmon flakes easily with a fork.

Serving

  1. 9

    Plate the Dish

On a serving plate, place a portion of the grilled salmon, top it generously with mango salsa, and serve alongside the seasoned broccoli.

  2. 10

    Enjoy!

Serve immediately and enjoy your Mardi Gras Salmon with the fresh flavors of mango salsa and nutritious broccoli.
