Fried Jalapeños

Prepare the Jalapeños
Slice the jalapeños into rings and remove the seeds if you prefer less heat.

Make the Batter
In a bowl, mix the flour, cornstarch, baking powder, and salt. Gradually add the cold water until the batter is smooth.

Heat the Oil
In a deep pot or fryer, heat the vegetable oil to 350°F (175°C).

Fry the Jalapeños
Dip the jalapeño rings into the batter, then carefully place them in the hot oil. Fry until golden brown, about 3-4 minutes. Remove and drain on paper towels.
Sriracha Aioli

Mix the Ingredients
In a small bowl, combine the mayonnaise, Sriracha sauce, and lemon juice. Stir until well mixed.

Prepare the Vegetables
Slice the tomato and red onion. Rinse and dry the lettuce.

On the bottom half of each brioche bun, spread a layer of mayonnaise. Layer with lettuce, tomato slices, red onion, fried jalapeños, and a slice of pepper jack cheese. Top with the other half of the bun.
