Catfish Strips

In a large bowl, soak the catfish fillets in buttermilk for at least 30 minutes to tenderize.

In another bowl, mix together the flour, cornmeal, cayenne pepper, salt, and black pepper.

Heat oil in a deep skillet or fryer to 350°F (175°C).

Remove catfish from buttermilk, allowing excess to drip off. Dredge each fillet in the flour mixture until well coated.

Carefully place the coated fillets in the hot oil. Fry until golden brown, about 5-7 minutes. Remove and drain on paper towels.
Waffle Fries

Prepare waffle fries according to package instructions, typically by baking or frying until crispy.

Hush Puppies

In a bowl, combine cornmeal, flour, baking powder, sugar, and salt.
