Main Ingredients

Method

Preparation

  1. 1

    Marinate the Alligator

In a medium bowl, combine the alligator meat and buttermilk. Cover and refrigerate for at least 1 hour, or overnight for best results. This will help tenderize the meat and infuse flavor.

  2. 2

    Prepare the Coating

In a large bowl, mix together the cornmeal, all-purpose flour, cayenne pepper, garlic powder, onion powder, salt, and black pepper. This will be the coating for the alligator pieces.

Cooking

  1. 3

    Heat the Oil

In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of the coating mixture into the oil; if it bubbles and sizzles, it's ready.

  2. 4

    Coat the Alligator

Remove the alligator pieces from the buttermilk, allowing excess to drip off. Dredge them in the cornmeal mixture, ensuring they are well coated on all sides.

  3. 5

    Fry the Alligator

Carefully add the coated alligator pieces to the hot oil in batches, being careful not to overcrowd the pan. Fry for about 3-5 minutes, or until golden brown and cooked through. Use a slotted spoon to remove them from the oil and drain on paper towels.

Serving

  1. 6

    Serve

Serve the fried alligator hot with your choice of dipping sauce, such as remoulade or hot sauce, and enjoy!
