In a large bowl, combine the buttermilk and hot sauce. Add the catfish fillets to the mixture, ensuring they are fully submerged. Cover and refrigerate for at least 30 minutes.

In another bowl, mix together the all-purpose flour, cornmeal, salt, black pepper, paprika, garlic powder, and onion powder.

Coat the Catfish
Remove the catfish from the buttermilk marinade, allowing excess to drip off. Dredge each fillet in the flour mixture, pressing gently to adhere the coating.

In a large frying pan or deep fryer, heat the oil over medium-high heat until it reaches 350°F (175°C).

Carefully place the coated catfish fillets in the hot oil, cooking in batches if necessary. Fry for 5-7 minutes on each side or until golden brown and cooked through. Use a slotted spoon to transfer the fried catfish to a paper towel-lined plate to drain excess oil.
