Preparation of Rice

Cook the Rice
In a medium saucepan, combine the long-grain rice, water, and salt. Bring to a boil over high heat, then reduce the heat to low, cover, and simmer for about 18-20 minutes or until the rice is tender and the water is absorbed. Remove from heat and let it sit covered for 5 minutes before fluffing with a fork.

Sauté Vegetables
In a large skillet over medium heat, melt the butter. Add the chopped onion, bell pepper, and celery. Sauté until the vegetables are softened, about 5 minutes. Add minced garlic and sauté for an additional minute.

Make the Roux
Sprinkle flour over the sautéed vegetables and stir constantly for 2-3 minutes until the mixture is golden brown.

Add Crawfish and Seasoning
Stir in the crawfish tails, chicken broth, Cajun seasoning, salt, and black pepper. Bring to a simmer and cook for 10-15 minutes until thickened. Stir in chopped green onions before serving.
Hand-Battered Shrimp

Prepare the Breading
In a mixing bowl, combine flour, cornmeal, and Cajun seasoning. Dip each shrimp in buttermilk, then dredge in the flour mixture, ensuring they are well coated.

Fry the Shrimp
In a deep skillet, heat oil over medium-high heat. Once hot, fry the breaded shrimp in batches until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.
Cooking the Catfish

Rub the catfish fillets with Cajun seasoning, salt, and black pepper. Heat olive oil in a skillet over medium-high heat. Cook the catfish for about 4-5 minutes on each side until blackened or golden brown and cooked through.
Assembly

Plate the Dish
On a plate, serve a generous scoop of rice, top with blackened or fried catfish, and generously spoon crawfish étouffée over the top. Finally, add the hand-battered shrimp on the side or on top as desired.
