Prepare the Seafood

    Boom Boom Shrimp Preparation

    If using Boom Boom shrimp, ensure they are thawed if previously frozen. Toss them with a bit of salt and pepper. In a deep skillet, heat oil over medium heat and fry the shrimp until golden brown and cooked through, about 3-4 minutes per side. Remove and let drain on paper towels.

    If using fried shrimp, preheat your fryer or oil in a deep pan. Coat the shrimp in seasoned cornmeal and fry until golden, about 2-3 minutes. Drain on paper towels.

    For fried catfish, season the fillets with salt and pepper. Dredge in cornmeal and fry in hot oil until crispy and cooked through, about 5-6 minutes. Drain on paper towels.

Assemble the Poboy

    Slice the po-boy bread lengthwise without cutting all the way through, creating a pocket for the fillings.

    Spread a generous layer of mayonnaise inside the bread. Layer with shredded lettuce, sliced tomatoes, and pickles.
