Preparation of Jellyfish

Rehydrate the Jellyfish
Place the dried jellyfish in a large bowl and cover it with cold water. Let it soak for 6 to 8 hours, or until it becomes soft and pliable.

Salt the Jellyfish
Once rehydrated, drain the jellyfish and sprinkle it with salt. Let it sit for about 30 minutes to draw out excess moisture, then rinse under cold water to remove the salt.

Slice the Vegetables
Using a sharp knife, thinly slice the cucumber and carrot into matchstick-sized pieces. Chop the green onions into small slices.
Dressing and Assembly

Mix the Dressing
In a small bowl, whisk together the rice vinegar, sesame oil, and soy sauce until well combined.

Combine Ingredients
In a large mixing bowl, combine the rehydrated and salted jellyfish, sliced cucumber, carrot, and green onions.

Add Dressing
Pour the dressing over the mixed ingredients and toss gently to coat all the ingredients evenly.

Garnish and Serve
Sprinkle sesame seeds on top and drizzle with chili oil to taste. Serve chilled or at room temperature as a salad or appetizer.
