Method
Fish Preparation

Blacken the Redfish
Preheat a skillet over medium-high heat. Rub the redfish fillets with olive oil and then coat evenly with blackening seasoning.

Cook the Fish
Place the coated redfish fillets in the hot skillet and cook for about 3-4 minutes on each side, or until blackened and cooked through. Remove from heat and set aside.
Slaw Preparation

Mix the Slaw Ingredients
In a large bowl, combine shredded cabbage, shredded carrot, mayonnaise, apple cider vinegar, salt, and black pepper. Mix well until all ingredients are evenly coated.

Chill the Slaw
Cover the slaw and refrigerate for at least 30 minutes to allow flavors to meld.
Mango Salsa Preparation

Prepare the Salsa
In a mixing bowl, combine diced mango, chopped red onion, minced jalapeño, chopped cilantro, lime juice, and salt. Stir gently to mix all ingredients. Set aside.
Sriracha Aioli Preparation

Make the Aioli
In a small bowl, whisk together mayonnaise, sriracha sauce, lime juice, and garlic powder until smooth. Adjust seasoning to taste.
Waffle Fries Preparation

Cook the Waffle Fries
Prepare frozen waffle fries according to package instructions. Once cooked, sprinkle with salt.
Assembling Tacos

Assemble the Tacos
Warm the taco-sized flour tortillas in a skillet or microwave. Layer blackened redfish, slaw, and mango salsa in each tortilla. Drizzle with sriracha aioli before folding the tortillas and serving.
