Method
Fish Preparation

Season the Fish
Pat the redfish fillets dry with a paper towel. Generously coat both sides of each fillet with blackening seasoning.

Cook the Fish
In a large skillet, heat olive oil over medium-high heat. Once hot, add the seasoned redfish fillets. Cook for about 4-5 minutes per side or until the fish is cooked through and has a blackened crust.
Rice Cooking

Prepare the Rice
In a medium saucepan, combine water and salt. Bring to a boil. Add the long-grain rice, stir once, cover, and reduce heat to low. Simmer for about 18-20 minutes or until the rice is tender and water is absorbed. Fluff with a fork before serving.
Lemon Butter Sauce

Make the Sauce
In a small saucepan over low heat, melt the butter. Once melted, add minced garlic and sauté for about 1 minute. Stir in lemon juice and chopped parsley. Keep warm until ready to serve.
Mango Salsa Preparation

Mix the Salsa
In a medium bowl, combine diced mango, red onion, jalapeño, cilantro, and lime juice. Stir gently to combine and set aside.
Crawfish Cream Sauce Preparation

Prepare Crawfish Sauce
In a saucepan over medium heat, combine crawfish tails, heavy cream, green onions, and cajun seasoning. Stir well and simmer for about 5-7 minutes until slightly thickened. Keep warm until serving.
Broccoli Preparation

Cook the Broccoli
In a pot with a steamer basket, add water and bring to a boil. Add broccoli florets, cover, and steam for about 5-7 minutes until bright green and tender. Drizzle with olive oil and season with salt and pepper to taste before serving.
