Preparation

    Marinate the Pork

    In a bowl, combine olive oil, minced garlic, chopped rosemary, salt, black pepper, and lemon juice. Mix well.

    Coat the Pork

    Place the pork loin in a large resealable plastic bag or a shallow dish. Pour the marinade over the pork, ensuring it's well-coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or preferably overnight for better flavor.

    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Prepare for Roasting

    Remove the pork from the marinade and place it on a cutting board. Discard the marinade.

    Sear the Pork

    In a large skillet over medium-high heat, add a little olive oil. Once hot, sear the pork loin on all sides until golden brown, about 3-4 minutes per side.

    Roasting

    Transfer the seared pork to a baking dish and place it in the preheated oven. Roast for about 25-30 minutes, or until the internal temperature reaches 145°F (63°C).

    Rest the Pork

    Once cooked, remove the pork from the oven and let it rest for 10 minutes before slicing. This allows the juices to redistribute.

    Slice and Serve

    Slice the pork loin into medallions and serve on a cutting board, garnished with fresh parsley and lemon wedges if desired.
