Salmon

Method

Preparing Mango Salsa

  1. 1

    Mix Ingredients

In a medium bowl, combine the diced mango, finely chopped red onion, minced jalapeño, lime juice, chopped cilantro, and salt. Stir well to combine. Set aside to allow the flavors to meld.

Grilling Salmon

  1. 2

    Prepare the Grill

Preheat your grill to medium-high heat. Brush the grill grates with olive oil to prevent sticking.

  2. 3

    Season the Salmon

Pat the salmon fillets dry with paper towels. Brush both sides with hot honey, then season with salt and black pepper.

  3. 4

    Grill the Salmon

Place the salmon fillets on the grill, skin-side down. Grill for about 4-6 minutes on each side, or until the salmon is cooked through and flakes easily with a fork. Brush with additional hot honey during the last minute of grilling.

Preparing Broccoli

  1. 5

    Cook the Broccoli

In a large pot, bring water to a boil. Add the broccoli florets and cook for 3-4 minutes until bright green and tender-crisp. Drain and immediately rinse under cold water to stop the cooking process.

  2. 6

    Season the Broccoli

In a large bowl, toss the cooked broccoli with olive oil, garlic powder, and salt. Serve warm.
