    Rinse the jumbo shrimp under cold water and pat them dry with paper towels. This helps to remove any excess moisture, ensuring a crispier batter.

Batter Mixing

    Mix Dry Ingredients

    In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, garlic powder, and paprika. Whisk together until well combined.

    Add Wet Ingredients

    In a separate bowl, combine the beaten egg and water or beer. Pour this mixture into the dry ingredients and mix until smooth. The batter should be thick but pourable.

Cooking

    Heat the Oil

    In a large frying pan or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Batter the Shrimp

    Dip each shrimp into the batter, ensuring it's fully coated. Let any excess batter drip off.

    Fry the Shrimp

    Carefully place the battered shrimp in the hot oil in batches, making sure not to overcrowd the pan. Fry for about 3-4 minutes or until golden brown and cooked through. Use a slotted spoon to remove the shrimp and drain on paper towels.

    Blacken the Shrimp (optional)

    For blackened shrimp, instead of frying, season the shrimp with blackening seasoning. Heat a cast-iron skillet over high heat, add a small amount of oil, and cook the shrimp for 2-3 minutes on each side until charred and cooked through.
