Fried Jalapeños

    Prepare the Jalapeños

    Slice the fresh jalapeños into rings, removing the seeds if you prefer less heat.

    Make the Breading Mixture

    In a bowl, combine the all-purpose flour, cornmeal, salt, and black pepper.

    Prepare the Egg Mixture

    In a separate bowl, whisk together the egg and milk until well combined.

    Bread the Jalapeños

    Dip each jalapeño ring first in the egg mixture, then coat in the breading mixture.

    Fry the Jalapeños

    In a deep skillet, heat vegetable oil over medium-high heat. Fry the breaded jalapeños until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.

Sriracha Aioli

    Mix the Aioli

    In a small bowl, combine mayonnaise, sriracha sauce, and lemon juice. Mix until smooth and set aside.

Sandwich Assembly

    Prepare the Buns

    Toast the brioche buns lightly on a skillet or in the oven until golden.

    Assemble the Sandwiches

    On the bottom half of each bun, layer lettuce, a slice of tomato (sliced), a slice of red onion, and a slice of pepper jack cheese.

    Add Jalapeños and Aioli

    Top the cheese with several fried jalapeño rings and drizzle with the sriracha aioli.

    Place the top half of the brioche bun on each sandwich and serve with a side of waffle fries.
