Make the BBQ Sauce
In a medium saucepan over medium heat, combine all the ingredients for the BBQ sauce: ketchup, apple cider vinegar, brown sugar, smoked paprika, garlic powder, onion powder, black pepper, salt, and liquid smoke.

Simmer the Sauce
Stir the ingredients together and bring to a simmer. Allow it to cook for about 15 minutes, stirring occasionally, until the sauce thickens slightly. Remove from heat and let it cool.

Cook the Bacon
In a skillet over medium heat, cook the bacon slices until crispy, about 5-7 minutes. Once done, remove and let them drain on paper towels.

Prepare the Waffle Fries
Cook the waffle fries according to package instructions. Typically, this involves either baking or frying until golden brown and crispy.

Assemble the Burger
Toast the brioche buns lightly on a skillet or grill. Spread mayonnaise on the bottom half of each bun. Layer with lettuce, tomato, a slice of cheddar cheese, crispy bacon, onion rings, pickles, and a generous amount of BBQ sauce. Top with the other half of the bun.
