Caramelize the Onions
In a skillet over medium heat, melt 1 tablespoon of butter. Add thinly sliced onions and cook, stirring occasionally, for about 20-25 minutes until golden brown and caramelized. Remove from heat and set aside.

Prepare the Bread
Spread 1 tablespoon of butter on one side of each slice of sourdough bread. This will be the outside of the sandwich.

Grate the Cheese
Grate the aged cheddar and Gruyère cheese using a box grater or food processor, and combine them in a bowl.

Build the Sandwich
On the unbuttered side of two slices of bread, layer half of the cheese mixture, followed by caramelized onions, fresh spinach, and a spoonful of fig jam. Top with the remaining cheese mixture and finish with the second slice of bread, buttered side facing out.

Grill the Sandwich
Heat a non-stick skillet over medium heat. Once hot, place the sandwich in the skillet. Grill for about 4-5 minutes on each side, or until the bread is golden brown and crispy and the cheese is melted.

Remove the sandwich from the skillet, let it cool for a minute, then slice in half and serve warm.
