In a mixing bowl, combine the buttermilk and hot sauce. Add the alligator meat pieces and ensure they are well-coated. Cover the bowl and refrigerate for at least 1 hour, ideally overnight for better flavor.

In another bowl, mix the all-purpose flour, cornmeal, cajun seasoning, salt, and black pepper until well combined. This will be your coating for the alligator.

In a large, heavy-bottomed pot or deep fryer, heat the oil over medium-high heat until it reaches 350°F (175°C). You can test if the oil is ready by dropping a small amount of the coating into the oil; it should sizzle immediately.

Remove the alligator meat from the marinade. Allow excess buttermilk to drip off, then dredge each piece in the flour and cornmeal mixture, ensuring they are fully coated.

Carefully place the coated alligator pieces into the hot oil in batches, being careful not to overcrowd the pot. Fry for about 3-4 minutes or until golden brown and cooked through. Use a slotted spoon to remove the pieces and drain on paper towels.
