Method
For the Fried Jumbo Shrimp
- 1
Prepare the Shrimp
In a large bowl, combine the buttermilk, egg, cajun seasoning, salt, and black pepper. Add the peeled and deveined jumbo shrimp to the mixture and let them marinate for at least 30 minutes.
- 2
Prepare the Breading
In a separate bowl, mix the all-purpose flour and cornstarch together. This will be used for breading the shrimp.
- 3
Heat the Oil
In a deep skillet or fryer, heat the oil over medium-high heat until it reaches 350°F (175°C).
- 4
Batter the Shrimp
Remove the shrimp from the marinade and allow excess liquid to drip off. Dredge each shrimp in the flour-cornstarch mixture, ensuring they are evenly coated.
- 5
Fry the Shrimp
Carefully place the breaded shrimp in the hot oil, frying in batches to avoid overcrowding. Fry for about 2-3 minutes or until golden brown. Remove and drain on paper towels.
For the Seasoned Waffle Fries
- 6
Cook the Waffle Fries
Prepare the frozen waffle fries according to package instructions, either baking or frying.
- 7
Season the Fries
Once cooked, sprinkle the fries with cajun seasoning and salt to taste, tossing to coat evenly.
For the Hush Puppies
- 8
Mix the Dry Ingredients
In a large bowl, combine the cornmeal, all-purpose flour, baking powder, sugar, and salt.
- 9
- 10
Fry the Hush Puppies
Heat oil in a deep skillet over medium heat. Drop spoonfuls of the batter into the hot oil, frying until golden brown, about 3-4 minutes. Remove and drain on paper towels.
