    Chop the Vegetables

    Finely chop the onion, green bell pepper, celery, and garlic. Set aside.

    Make the Roux

    In a large pot, heat the vegetable oil over medium heat. Add the flour and stir continuously until the mixture turns a light brown color, about 10 to 15 minutes.

    Add the Vegetables

    Add the chopped onion, green bell pepper, celery, and garlic to the roux. Cook for another 5 minutes, stirring frequently until they soften.

    Add the Broth and Seasonings

    Slowly pour in the chicken broth while stirring. Add the Cajun seasoning, bay leaves, salt, and black pepper. Bring to a simmer.
