    In a large bowl, combine buttermilk and hot sauce. Add catfish fillets, ensuring they are fully submerged. Cover and refrigerate for at least 1 hour, or overnight for best results.

    In a shallow dish, mix together the flour, cornmeal, paprika, garlic powder, onion powder, salt, and black pepper.

    Coat the Catfish

    Remove catfish from buttermilk marinade, allowing excess to drip off. Dredge each fillet in the flour mixture, ensuring each piece is evenly coated. Shake off any excess coating.

    Fry the Catfish

    In a large heavy skillet or deep fryer, heat oil over medium-high heat until hot (about 350°F). Carefully place coated catfish fillets in the hot oil, frying in batches if necessary. Fry for 5-7 minutes on each side until golden brown and crispy. Remove and drain on paper towels.
