    Chop Vegetables

    Finely chop the green bell pepper, onion, celery, and garlic. Set aside.

    Melt Butter

    In a large skillet or pot, melt the butter over medium heat.

Cooking

    Sauté Vegetables

    Add the chopped green bell pepper, onion, celery, and garlic to the melted butter. Sauté for about 5-7 minutes until the vegetables are soft and translucent.

    Make Roux

    Sprinkle the flour over the sautéed vegetables and stir continuously for about 10 minutes until the mixture turns a light brown color.

    Add Crawfish and Stock

    Stir in the crawfish tails, seafood stock, Cajun seasoning, bay leaves, salt, and black pepper. Mix well.

    Simmer

    Reduce the heat to low and let the mixture simmer for about 20-30 minutes, stirring occasionally, until it thickens and the flavors meld.

Serving

    Prepare Rice

    While the étouffée is simmering, prepare the cooked white rice according to package instructions.

    Serve

    Serve the crawfish étouffée hot over a scoop of cooked white rice. Garnish with chopped green onions and parsley to taste.
