Preparation

    Grill the Chicken

    Preheat your grill to medium-high heat. Season the chicken breasts with salt and pepper. Grill for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C). Remove from the grill and let rest for 5 minutes before slicing.

    Prepare the Salad Ingredients

    While the chicken is grilling, wash and dry the mixed greens. Rinse the strawberries and blueberries under cold water. Slice the strawberries and the Granny Smith apple thinly.

    Prepare the Cheese

    Grate or cube the Jack cheese and set aside.

    Candied Pecans

    If you don't have pre-made candied pecans, you can quickly make them by heating pecans in a skillet over medium heat with a tablespoon of sugar until the sugar melts and coats the pecans. Allow to cool.

Assembly

    Assemble the Salad

    In a large salad bowl, combine the mixed greens, sliced strawberries, blueberries, and sliced Granny Smith apple. Toss gently to mix.

    Add the Chicken

    Slice the grilled chicken breasts and add them to the salad.

    Top with Cheese and Pecans

    Sprinkle the Jack cheese and candied pecans over the top of the salad.

    Dress the Salad

    Drizzle the raspberry walnut vinaigrette over the salad, tossing lightly to combine. Add more dressing to taste.
