Prepare the mixture
In a large mixing bowl, combine the boudin sausage (removed from casings), cooked white rice, chopped green onions, and minced garlic. Mix well until all ingredients are incorporated.

Add binders
Stir in the beaten eggs, breadcrumbs, Cajun seasoning, salt, and black pepper. Mix until the mixture is sticky and holds together when formed into a ball.

Shape the balls
Using your hands, scoop out a portion of the mixture and roll it into a ball about 1.5 inches in diameter. Repeat until all the mixture has been shaped into balls.
Frying the Boudin Balls

Heat the oil
In a deep frying pan or a large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the balls
Carefully add the boudin balls to the hot oil, a few at a time, making sure not to overcrowd the pan. Fry for about 4-5 minutes, or until they are golden brown and cooked through.

Drain and serve
Once cooked, remove the boudin balls from the oil and place them on a plate lined with paper towels to drain excess oil. Serve hot with your favorite dipping sauce.
