Prepare the Shrimp
In a bowl, season the shrimp with salt and black pepper. Set aside.

Set Up Breading Station
In three separate bowls, place the flour, beaten eggs, and panko breadcrumbs. Dip each shrimp first in flour, then in eggs, and finally coat with panko breadcrumbs.

Fry the Shrimp
Heat vegetable oil in a deep skillet over medium-high heat. Once hot, fry the breaded shrimp in batches until golden brown, about 3-4 minutes. Remove and drain on paper towels.

Mix the Sauce
In a medium bowl, whisk together mayonnaise, sriracha sauce, honey, lime juice, and garlic powder until smooth. Adjust seasoning to taste.
Taco Assembly

Warm the Tortillas
In a dry skillet, warm the corn tortillas over medium heat for about 30 seconds on each side until pliable.

Assemble the Tacos
On each tortilla, layer the shredded cabbage, fried shrimp, diced tomatoes, and Monterey Jack cheese. Drizzle with Boom Boom sauce.
